
Ingredients
- 1 medium eggplant, cut into 1-inch steaks.
- 2 tbsp olive oil.
- Salt to taste.
- 3 tbsp white or red miso.
- 1 tbsp sugar.
- 2 tbsp mirin.
- 1 tbsp cooking sake
- 2 tbsp water.
- 2 spring onions, finely sliced to serve.
- Sesame seeds to garnish.
Method
- Drizzle eggplant pieces with olive oil and salt.
- Make miso dressing by mixing together miso, sugar, mirin, cooking sake and water.
- Use a food silicone brush to coat eggplant pieces with the miso dressing, reserving some for later. Spread eggplant pieces evenly in the air fryer basket - do not overlap. Air fry at 200C for 7 minutes.
- Remove eggplant pieces from the air fryer and pour remaining miso dressing over the roasted eggplant - tossing it to coat well.
- Return eggplant pieces to air fryer and continue to roast for another 5 minutes.
- Remove eggplant from the air fryer, transfer to a serving plate, scatter with spring onions and sesame seeds.
