Ingredients
- 1 cup plain flour
- 1 cup tonic water
- Salt/pepper to season batter
- Approx 1 1/2 cup fine breadcrumbs
- Cooking spray
- 2 X cans baby corn spears , rinsed & drained well
- 1 tbsp oil
- 1 tablespoon grated green ginger
- 1/4 cup tomato sauce
- 2 TSP minced garlic
- 1 tbsp sugar
- 2 TSP dry sherry
- 1/3 cup water
- 1/4 cup honey
- 2 tbsp ABC chilli sauce
- *cornflour may be required for sauce thickening
- * sesame seeds & diced spring onion for garnishing (optional)
Method
- Whisk well together plain flour , salt/pepper and tonic water
- Dip baby corn spears individually in the batter mix and crumb in your breadcrumbs.
- Spray basket of your air fryer and place your crumbed baby corn in ar fryer single layer. Lightly spray with cooking oil.
- Air fry 180d approx 12-14 mins (depending on power of your air fryer ). You want to air fry them till cooked through, but not overly crispy. Check often.
- Sauce : heat oil in saucepan
- Sauteed minced garlic and ginger
- Add tomato sauce, chilli sauce , sherry, and honey , stir well.
- Add water and sugar .
- Gently simmer till sauce thickens suitable for pouring.
- If required you can add cornflour to thicken sauce.
- Pour sauce over your air fried baby corn spears . Garnish with sesame seeds and diced spring onions . This dish is to be consumed fresh , not to be refrigerated or frozen .
- ** if you prefer sauce to be sweeter add extra honey , or if you prefer sauce to be hotter add more chill sauce.
