
Ingredients
- SATE TOFU
- 400 gms Firm Tofu (drained & pressed) - cut into 3 cm cubes)
- 1 Tbs Natural Creamy Peanut Butter
- 1 tsp Valcom Red Curry Paste
- 2 Tbs LKK Premium Soy Sauce
- 1 Tbs Maple Syrup
- 1 Tbs Obento Rice Wine Vinegar
- 1 cl Garlic (sliced)
- 1 tsp Valcom Kaffir Lime Leaves
- 1 Tbs Water
- SATE SAUCE
- 160 mls TCC Coconut Milk
- 2 Tbs Natural Creamy Peanut Butter (or crunchy if preferred)
- 2 tsp ABC Sweet Soy Sauce
- 2 tsp Squid Brand Fish Sauce
- 2 tsp Valcom Red Curry Paste
- 1 tsp Tamarind Puree
- 2 tsp Brown Sugar
- 1 tsp Valcom Kaffir Lime Leaves (very finely chopped)
- 1/2 tsp Garlic (minced)
- 1 Tbs Lime Juice (freshly squeezed)
- PORK BELLY BITES
- 500 gms Pork Belly - cut into small strips (approx 5 cm x 2 cm)
- Salt & Pepper (to season)
- TO SERVE - Vermicelli , Lime Wedges, Noodles, Wombok, Carrot, Cucumber & Red Onion Salad
- GARNISH - Tomato Roses, Lime Slices, Toasted Peanuts (roughly chopped), Red Chilli & Spring Onion (thinly sliced)
Method
- SATE TOFU
- Place skewers in water to soak (to prevent burning)
- Combine marinade ingredients, whisk until well combined.
- Place tofu cubes in a bowl & pour the marinade over, gently toss to combine, marinate in fridge for 30 minutes.
- Just before cooking, pat dry & spray lightly with oil.
- PORK BELLY BITES
- Season the pork bites with salt & pepper, spray lightly with oil.
- TO COOK - preheat air fryer to 200 C (a few minutes will do)
- Arrange the tofu & pork belly bites in a single layer, bake for 15 minutes, turning once (if necessary) - remove & allow to cool a little, thread onto skewers alternating the tofu & pork.
- Return to air fryer & bake for 3 minutes (to warm through)
- SATE SAUCE
- While the tofu & pork are cooking, place sauce ingredients (except the lime juice) in a small pan, simmer until slightly thickened, add lime juice & adjust flavours to taste.
- TO SERVE - Arrange vermicelli noodles, wombok, carrot, cucumber & red onion salad in a bowl (or substitute your favourite Thai salad recipe) top with 2 skewers per serve, drizzle with sate sauce & garnish with tomato roses, lime slices & sprinkle with toasted peanuts, sliced red chilli & sliced spring onion.
