
Ingredients
- *NOTE: My airfryer does not need preheating. Please adjust cooking times if necessary.
- ***Ingredients for Rolls:
- 2 eggplants, sliced lengthwise in 3-4mm thickness
- 1 pack tasty tempeh, sliced into fingers, dusted with a little plain flour
- 1 pack fried tofu puffs, soaked in boiling water for 10 mins, then squeezed dry
- 2 tsp coconut oil
- Olive oil spray, to airfry eggplant
- Juice 1 lime
- Green spring onion slices
- ***Ingredients for Balado Spice Paste:
- 1 tbsp Yeo’s Sambal Oeleck
- 2 small green chillies
- 6 cloves garlic, peeled
- 6 Asian shallots, peeled
- 5cm length ginger, peeled, roughly sliced
- 5cm length galangal, peeled, roughly sliced
- 2cm length turmeric, peeled
- 1 lemongrass stalk, white part only, bruised, roughly sliced
- 2 tomatoes, quartered
- 4 kaffir lime leaves, spines removed, sliced finely
- 2 dried daun salam leaves
- 1 tbsp palm sugar, grated
- 1 tsp salt
- ½ tsp black pepper
- 3 tbsp water
Method
- ***Method for Airfryer Balado Spice Paste:
- Blend all Spice Paste ingredients in high-speed blender till smooth.
- Place coconut oil in metal pan into airfryer. Melt at 160°C (approx 2 mins).
- Add blended Spice Paste. Airfry 160°C for 20- 25 mins, stirring occasionally, until paste is thick and almost dry.
- Adjust seasoning to taste, add lime juice, stir, set aside.
- ***Method for Tempeh:
- Place flour-dusted tempeh fingers in airfryer basket. Spray with olive oil spray. Airfry 180°C 10 mins, turning and spraying halfway through. Set aside.
- ***Method for Tofu Puffs:
- Place tofu puffs in airfryer basket. Airfry 180°C for 4 mins to freshen up. Set aside.
- ***Method for Roasted Eggplant Slices:
- Place 3-5 eggplant slices in airfryer basket at a time. Do not overlap. Spray liberally with olive oil, season with salt, pepper. Airfry 180°C for 15-20 mins, turning over and spraying with olive oil halfway through. Airfry until golden brown, but still soft. Repeat with remaining eggplant slices.
- ***Method for making Rolls:
- Roll up a tempeh finger and 1-2 fried tofu puffs in a roasted eggplant slice. Repeat with remaining eggplant slices.
- Place seam-side down in Balado sauce, nestle Rolls into sauce, spread a little sauce over the top. Add a little water if sauce has thickened up too much.
- Airfry 180°C for 5 minutes to heat up Rolls.
- Sprinkle with spring onion slices and serve.
