Ingredients
- Obap sweet potato noodles
- 500g beef stir fry
- 1tbspn coconut oil
- 1 desert spoon sesame oil
- 1 large carrot shredded
- Half red capsicum
- Large handful spinach leaves
- 1 preserved lemon
- I teaspoon minced ginger
- Dash tamari
Method
- Fry beef in coconut oil until all moisture gone.
- At the same time boil water for sweet potato noodles and cook for 8 minutes.
- Shred carrot, add to beef with chopped preserved lemon and ginger. Fry for 2 minutes.
- Slice capsicum thinly and add to stir fry, fry for 2 minutes. Add spinach and dash of tamari, fry until ready.
- Drain sweet potato noodles, dish out and put stir fry on top.
