
Ingredients
- 1 kg bone in beef pieces
- 3/4 jar of Valcom Massaman Curry paste
- 2 tablesp cooking oil
- 400mls coconut cream
- 200 mls water
- 2 tsp tamarind paste
- 1 tablesp sugar
- 1/2 tsp salt
- 1 tsp fish sauce
- 1 onion
- 3 potatoes
- 1/4 cup toasted peanuts
- Coriander & chilli
- Boiled Rice
Method
- Stir fry 3/4 jar of Valcom Massaman Curry paste with 2 tablesp oil over low heat in frying pan until fragrant.
- Add 200 mls coconut cream, stir fry for 2 mins
- Add 1 kg beef pieces and stir fry over high heat for 2 mins
- Add remainder of 200mls coconut cream and 200 mls water, 2 tsp tamarind paste, 1 tsp fish sauce, 1/2 tsp salt, 1 tablesp sugar and 1 cubed onion. Mix it all together.
- Transfer all ingredients from frying pan into electric pressure cooker and cooked for 50 mins till beef is tender. Cooking time will depend on yr pressure cooker.
- Meanwhile cut up potatoes into cubes, add 2 tablesp of water & microwave for 5 mins till cooked.
- When pressure is released from pressure cooker, add potatoes & toasted peanuts to beef curry.
- Serve beef curry in dish, garnished with coriander and chilli. Serve with boiled rice.
