Ingredients
Main Ingredients
- 1/2 tbsp Oil
- 500 gms Pork ribs cut into 5cm pieces
- 5 cm root ginger, thinly sliced
- 3-4spring onions 5 cm long
- 1/2 leek cut into pieces 5 cmlong
- 500 ml of water
- 150 ml sake the
- 75 ml sugar [or monkfruit sweetener]
- 100ml mirin
- 100 ml soy sauce
- spring onion to garnish
- 2 eggs
Method
- Sear pieces of ribs in batches, to render the fat some of the fat
- Drain on paper towels
- Boil the pieces of pork, ginger and onion in just enough water to cover.
- Reduce the heat and simmer until the meat is tender about 2 hours.
- Bring the water, sake, mirin, sweetener and soy to the boil
- Add the pork and turn the heat down low. Cover with crumpled foil that rests on the meat. [drop lid]
- Simmer until sauce is thick
- Boil the eggs [2min boil, 5 min stand 0ff the heat]
- Serve with rice and steamed greens
