Ingredients
- 3 cups brown rice, 6 tablespoons of rice wine vinegar, 1.5 teaspoon salt, 4 teaspoons sugar, 200g shredded chicken, 200g fish cakes, 2 mini cucumbers, 1 long spring onion
Method
- Cook brown rice and let cool. Heat rice wine vinegar and mix salt and sugar until dissolved. Let mixture cool. Once rice and vinegar cool, mix together.
- Shred chicken,cut fish cake in strips and cut cucumber in small strips. Let rice on nori sheet flat spread all over. Put chicken, fish cucumber at bottom of wrap and roll with sushi mat.
- Leave sushi for 10 minutes for nori to soften before cutting with wet knife.
