- Sweet Potato:1 Sweet potato, peeled and cubed.Olive oil sprayGarlic powder4 tsp Roasted sesame sauceEggplant:1 eggplant, cubed1 tbs Sesame oil1 tbs Sesame seeds2 tbs Kecap Manis1/4 cup coriander, finely chopped.4 cups Iceberg lettuce, coarsely chopped.Mince500g Turkey mince1/4 cup coriander, finely chopped.1 tbs ginger8 tbs garlic4 tbs soy sause3 tbs brown sugar1 tbs Sesame oil1 onion, diced1 tbs oyster sauce
- 1. Preheat oven to 180C2. Prep sweet potato, spray baking tray with oil, place sweet potato on a baking tray spray with oil and sprinkle garlic powder evenly over and bake for 20-30 min on 180C (until cooked).3.Prep eggplant. Heat sesame oil in fry pan, add eggplant and coriander and cook until eggplant it soft (a little charred on the outside adds extra flavour. Once Eggplant is cooked add Kecap Manis and stir through for 2 min until eggplant is coated and sticky. Move to side dish to cook mince in same fry pan.4. Add sesame oil and onion to fry pan and cook until clear and soft. Add remaining ingredients and stir until mince is cooked through.5. Plate up once sweet potato cooked. Chopped lettuce on base of bowl and then on top of lettuce add the sweet potato, mince and eggplant portioned to a 1/3 each. drizzel the sesame dressing over the sweet potato, sesame seeds over the eggplant and coriander over the mince.
