Ingredients
- 2 tins black beans rinsed
 - Kewpie mayonnaise sriracha flavour
 - 1 carrot finely grated
 - 2 capsicum finely diced
 - 1 tin corn, drained
 - 2 packets taco seasoning
 - 2 tins diced tomatoes
 - 400 grams beef mince
 - 2 cups finely sliced iceberg lettuce
 - 1 cup grated cheddar cheese
 - 1/2 tin water
 - 2 tomatoes finely diced
 - 2 cups cooked brown rice
 - Small container of sour cream
 - Tablespoon olive oil
 
Method
- Put oil in frying pan with mince and cook through Add carrot and half the capsicum and cook for 5 mins till tenderAdd taco seasoning stir for 1 minAdd tins beans and tomatoes, 1/2 tin water and 2 tablespoons of Kewpie mayonnaise sriracha flavour and stir occasionally on low heat for 10 mins or till thickened
 - Layer in bowl or plate to taste, ie: Brown rice, lettuce, tomato, cheese, capsicum, corn, meat mixture, finish with a little sour cream and drizzle delicious Kewpie mayonnaise sriracha flavour over the top
