Ingredients
- Nori sheets (7)
- 3x 250g 90sec packet rice (brown or white)
- 1tbs rice wine vinegar
- 1x cucumber, sliced longways
- 1x avocado, sliced longways
- 1/2 roast chicken, shredded
- Mayonnaise (eg kewpie)
Method
- Cook rice as per packet instructions (eg. 90sec in microwave). Allow to cool.
- Add all 3 rice packets to a bowl and stir in rice wine vinegar.
- Lay out one nori sheet, shiny side down. Cover with a half centimetre thickness of rice (leaving a couple cm free on far side for rolling).
- Add a line of cucumber, avocado, chicken and mayonnaise in centre of nori sheet (on top of rice).
- Roll nori sheet into sushi roll.
- Serve whole or cut each roll into approx 6 portions. Serve with soy sauce and more mayonnaise.
