Ingredients
- Ramen noodles 250g
- Snow peas 100g
- Baby corn 300g
- Carrot x2
- Half a capsicum
- Chicken breast 500g
- Chinese 5 spice 1 teaspoon
- Oyster sauce 3 tablespoons
- Obento soy sauce 2 tablespoons
- Garlic 3 cloves
- Raw cashews half a cup
Method
- Cook noodles in a saucepan of boiling water, until just tender. Drain well and set aside.
- Llightly spray a non-stick wok with sesame oil and heat over high heat. Stir-fry chicken for 3 minutes until cooked through. Transfer to a plate and set aside
- Add vegetables to wok and stir-fry until just tender. Add garlic and cashews. Stir-fry another 1 minute.
- Return chicken to wok with noodles, sauces, Chinese five spice and 1 tablespoon water. Stir-fry for 1-2 minutes until well combined and hot.
