Ingredients
- 8L Water
- 2 Cups long grain white rice
- 1 tbsp salt
- 500g pork mince
- 800g chicken thighs
- Organic spring onion (for topping)
- Lee Kum Kee Pure Sesame Oil (for topping)
- Maggi Original Seasoning Sauce (for topping)
- Ground white pepper (for topping)
- Sliced dehydrated shiitake mushrooms (for topping)
Method
- Wash 2 cups of long grain white rice in a large sized pot
- Then fill large sized pot with 8L of water and bring to boil on high heat for 2 hours and add tablespoon of salt during boiling process
- Regularly stir the pot during the 2 hours of boiling process
- While rice is boiling, prepare chicken by washing and dicing chicken thighs
- After 2 hours, reduce to low to medium heat and add the diced chicken and loosened pork mince into the pot for half an hour.
- Continuously stir the pot
- After another 2 and a half hours, serve congee and add condiments to create your own personalised congee. Enjoy!
