Ingredients
- 300g Chicken thigh
- Sesame oil
- 100g Puffed tofu
- 4 Caramelised Shallot
- 5 cloves Garlic
- 1 medium size Chilli
- 2 Table spoon Palm sugar
- Thin egg noodle
- 1tsp Turmeric powder
- 400ml Coconut milk
- 2 cups Chicken stock
- 2 limes
Method
- Caramelise shallotMake 2cups chicken stockBoil egg noodleCrush chilli, garlic, shallot, turmeric into a paste
- To make sauce, heat sesame oil in pot and fry paste and Valcom Laksa paste for 5 minsAdd stock and coconut milkSimmer stirring for 5 minsAdd chicken and tofu and simmer to cook chicken Serve with fresh chilli, lime, bean sprouts and the caramelised shallot
