Ingredients
- Chicken breast or thigh
- Breadcrumbs , flour,egg
- 200g chicken breast
- Soba noodles
- Sliced Wombok cabbage
- Ginger
- Garlic
- Onions
- Home made vegetable stock
- Mirin
- Teryaki marinade
- Sesame oil
- 1 Fresh bird’s eye chilli
- Dried shallots
- Sliced red capsicum
- Vegetable oil
- 3 mushrooms
Method
- Sweat the onions, garlic, ginger, capsicum, and the stalks of the wombok in the vegetable oil until clear.Boil the soba noodles separately in hot water for 3 minutes and drain. Keep warm
- Coat the chicken in breadcrumbs and fry in small pan until crispy
- Add stock to sweating vegetables and the remaining cabbage, teriyaki, mirin, and sliced mushrooms and bring to boil. Simmer for five minutes then add noodles. Slice up breaded chicken breast.Place soup in a bowl and top with sliced chicken and dehydrated shallots.
