Ingredients
- 1 x 400g packet Flat Noodles/Kway Teow
- 2.5 tbsp kecap manis
- 1.5 tbsp Squid Brand Fish Sauce
- White pepper
- 2tbsp sesame oil
- 400g chicken breast, thinly sliced
- 3 eggs, lightly beaten
- ½ a head of broccoli florets
- 1 tsp Lee Kum Kee Chilli Garlic sauce
- 1 carrot, thinly sliced
- ½ a red capsicum
- Kewpie mayonnaise, to serve
- 1 tbsp of basil leaves, roughly chopped
- 1 spring onion, thinly sliced
Method
- Soak the noodles for 5 minutes. Gently separate. Combine the sauces and pepper in a separate bowl and set aside.
- Heat chicken until cooked and set aside.
- Add a splash of oil to the pan and cook eggs. Set aside.
- Add the remaining oil and cook the broccoli, carrot, and capsicum for 1 minute. Return chicken, egg, combined sauces, and noodles to the pan. Gently toss.
- Serve in bowls, and garnish with a drizzle of Kewpie, basil, and spring onion tips.
