Ingredients
- 1 large piece fresh ginger, peeled, slice
- 2 garlic cloves, crushed
- 2 star anise
- 1 tbs soy sauce
- 1 tbs fish sauce
- 2 chicken breast fillets
- 1l chicken stock
- 150g soba noodles
- 1/2 cup mint leaves (optional)
- 1/2 cup coriander leaves (optional)
- 2 spring onions, thinly sliced
- Sliced red chilli, (optional)
- Bean sprouts, (optional)
- 3 finely sliced carrots
- 2 broccoli, sliced
Method
- Combine ginger, garlic, star anise, soy and fish sauce with 2 cups of water in a large saucepan. bring to boil over a high heat. Reduce to low heat after boiling. Add chicken and simmer for 10 minutes until just cooked. Remove ginger and star anise and discard. Transfer chicken onto a plate, then shred when cooled. Add chicken stock and veg to pan and then simmer.
- Meanwhile, place noodles in a heatproof bowl. Cover with boiling water Stand for 5 minutes. Drain.
- Divide the noodles between serving bowls. top with chicken. Ladle broth and veg mixture into serving bowls. Top with (optional) chilli flakes, mint leaves, coriander, bean sprouts, and onions.
