Ingredients
- 10ml garlic oil
- 150g Valcom Laksa paste
- 250g chicken breast, diced into 1cm pieces
- 200g raw prawns, deveined
- 400ml coconut milk
- 150g broccolini, 2cm pieces
- 50g dry vermicelli noodles, cooked according to packet
- 10ml fish sauce
- 100g capsicum, chopped
- 60g snow peas, topped and tailed, chopped
- 100g bok choy, chopped, leaves separated
- 60g bean sprouts, for garnish
- Coriander (optional)
Method
- Heat oil in a large pan to medium heat. Add laksa paste stirring as needed until fragrant.
- Increase heat to medium high, add chicken, until almost cooked.
- Add prawns and coconut milk. Bring to the boil, add broccolini, stir occasionally for three minutes.
- Add capsicum, snow peas, bok choy stems, reduce to simmer and leave until cooked.
- Stir in vermicelli noodles and serve. Top with bean shoots and coriander as desired.
