Ingredients
- 60ml Apple cider vinegar
- 1 tbsp castor sugar
- 1 carrot peeled and shredded
- 1 small red chilli sliced
- 1 Lebanese cucumber sliced
- 1 crumbed chicken schnitzel
- 1 long baguette cut in half for 2 serves
- 1 cup coriander leaves
- Chilli sauce
- Kewpie mayonnaise
Method
- Mix sugar and vinegar in a medium sized bowl until sugar is dissolved.
- Add shredded carrot, sliced cucumber and sliced chilli. Mix together and set aside to pickle for 10 mins.
- Fry the chicken schnitzel and cut it into cubes.
- Cut open the 2 baguettes and place a layer of carrot and cucumber pickle mixture in them.
- Top with a layer of crispy sliced chicken .
- Add chilli sauce and mayo to taste.
- Top with coriander and serve.
