
Ingredients
- 4-6 tbsp Authentic Thai Green Curry Paste (Valcom)
- 1 tbsp Garlic Paste
- 1 tsb white sugar
- 500g Chicken Thigh
- 1 1/2 cups snow peas
- 2 cups Jasmine rice
- 1/2 Lime juice
- 400ml Coconut Milk
- I tsb oil
- Garnish- Coriander
- 1 cup (250ml) chicken broth
Method
- Heat oil over medium heat
- Add curry paste (and garlic) stir for 1 minute
- Add chicken broth and coconut milk, mix to dissolve paste
- Add chicken thigh, stir then lower to medium so bubbling gently, cook for 10 minutes
- Add sugar
- Add snow peas, cook for 2 minutes until soft.
- Add lime juice
- Serve curry over Jasmine rice
- Garnish with Coriander
