Ingredients
- 4 Chicken thighs
- 4 cups mixed vegies
- 1 can coconut cream
- 1 jar Valcom Laksa Paste
- Vermicelli noodles
Method
- Prepare vegies into bite size pieces and set aside. Cut thighs into 1inch pieces, fry on medium to high heat for a few minutes, add laksa paste, fry for about 5min, then add chopped vegies, stir through, then add coconut cream. Reduce heat to a simmer, cook till vegies are tender or to your liking.
- While the Laksa is cooking, pour boiling water over the vermicelli noodles in a large bowl. Soak for about 5min or till soft.
- Place noodles in a bowl then spoon laksa on top, Enjoy!
