Ingredients
- 2x Large Fresh Blue Crabs
- 2 tbsp Peanut Oil
- 1/2 Red Onion Diced
- 2x Long Red Chillies Sliced
- 2x Garlic Cloves Diced
- 2cm Fresh Ginger Grated
- 2x Spring Onions Chopped
- 3x Fresh Tomatoes
- 2 tbsp Chinese Rice Wine
- 1 tbsp Brown Sugar
- 1 tbsp Kecap Manis
- 1 Cup Corriander Leaves
Method
- Twist the legs and claws from the crabs to make some cracks in the shell of each piece using the blunt side of a knife or a mallet.
- Heat the peanut oil in a wok on high until it starts to smoke. Add the crabs and stir-fry for five minutes.
- Add the onions, chilli, garlic, ginger and spring onions.Stir-fry for 1 minute or until fragrant.
- Add the chopped tomato, rice wine, brown sugar and kecap manis.Stir fry for about three minutes until the sauce thickens.
- Transfer crab to a serving bowl and top with coriander leaves.
- Serve ontop of steamed Jasmine Rice
