Ingredients
- 500g egg noodles
- 1 carrot
- 1/2 bunch of coriander
- 500g cooked BBQ chicken
- 1x tin of baby corn
- 1 jar valcom Laksa paste
- 250mL coconut cream
- 1L chicken stock
- 1 Lime
Method
- Cook noodles according to packet instructions. Rinse with cold water, drain and seperate into serving bowls
- Cut baby corn, then add corn and cooked bbq chicken to serving bowl
- Fry 1 jar of laksa paste over medium heat, add chicken stock once fragrant.
- Add Julienne carrot and chopped coriander stems to pan with laksa paste and chicken stock
- Bring mixture to boil
- Reduce heat once boiled, and add coconut cream.
- Ladle mixture into serving bowls over noodles and baby corn
- Top with coriander leaves and lime juice to serve. Voila!
