Ingredients
- 1 can Valcom Coconut Cream
- 100 grs Melted butter
- 1 cup caster sugar
- 1 cup sr flour
- 1 cup desiccated coconut
- 3 eggs
- 1/2 TS Ground Nutmeg
- 1/2 TS Ground cinnamon
- 150 grms Palm sugar
- water
- Tropical Fruit for serving
Method
- Mix together in large bowl, melted butter,1 cup coconut cream,caster sugar,flour,desiccated coconut, eggs, gr nutmeg and gr cinnamon .
- Grease a cake tin.
- Put cake mixture in greased tin and cook approx 20 minutes at 180 degrees.
- To make syrup. In a small saucepan put palm sugar a DS Spoon of water and the remaining coconut cream.(1 Cup) Cook until syrup thickens.
- Cut cake into individual portions , add your choice of tropical fruits and pour a little syrup over each just before serving. serving
