Ingredients
- 1/2 kilo chicken breast
- 1 teaspoon sweet paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 small onion diced
- 2 cloves garlic (crushed)
- 2 large tomatoes diced & seedes
- 1 can coconut milk
Method
- Tenderise the chicken breast and Rub paprika & salt into it
- Add oil into a hot pan and cook chicken until it is lightly browned and cooked through. Remove from pan
- In the same pan, cook onions and garlic until onions are softened. Add in tomatoes and cook through for another 3 minutes
- Stir in coconut milk & let it gently bubble until it thickens slightly (about 5mins)
- Return chicken breasts to the pan, heat through and cover with the coconut sauce
- Serve with jasmine rice and steamed broccoli
