- 400ml coconut milk1 3/4 cup basmati rice2 1/2 cups water2 chicken stock cubes
- Combine water, coconut milk and stock cubes in medium saucepan and bring to boil.Add rice and turn down to low setting stirring occasionally. When liquid is almost gone, turn off heat with lid on and let rice rest for 5-20 mins. Loosen with fork and serve.
