- Soak the diced/sliced chicken in coconut milk, whilst you prep all your vegetables, Remove chicken from milk & sauté with some red curry paste, add the hard vegetables cook for 3 mins, add the remaining veg’s & 1 cup of coconut milk (the soaking milk is fine to use), cook all for about 10- 12 mins then serve, can be simply in a bowl with crunchy fried shallots, or with rice, or a noodle of your choice.
