Ingredients
- 1 cup small tapioca pearls
- 2 cups Valcom Coconut Milk
- 2 cups Coconut Water
- 2tbsp caster sugar
- 1 TSP vanilla bean paste
- 1 whole mango ( or 1 cup frozen mango pieces)
- 1/2 cup small diced watermelon
- 1/2 cup small diced Kiwi Fruit
- 1/4 cup fresh raspberries
- 2 cups vegetable cooking oil
- 2 rounds dried rice paper
- 1 TSP food colouring
- 2 tbsp sugar pearls
Method
- Preparing the tapioca:Place tapioca pearls in a large bowl and cover with water ( approx 4 cups) , let soak for 20 mins then strain through a fine sieve, tapioca will be slightly swollen & softened. Set aside. In heavy bottomed pot place Coconut Milk, Coconut Water, vanilla bean paste & caster sugar... Cook at low heat until mixture starts to simmer - and soaked/ strained tapioca pearls...let simmer over low heat for approx 15 minutes stirring continuously, mixture will start to thicken - once tapioca is completely cooked ( you can squish one pearl between your fingers with no hardness remaining) remove from heat & set aside until ready to assemble parfaits.
- To make the mango puree:Blend fresh or frozen ( defrosted) mango in blender until smooth.
- Rice Paper Garnish:Cut rice paper wheels into long triangle shapes ( or whatever shape you'd like ) In a large bowl place 2 cups of water and whisk in 4 drops of food colouring. Dip the cut rice paper briefly into coloured water letting excess water drip off , place coloured rice paper pieces onto a tray with baking paper & sprinkle coloured sugar pearls over top. Let rice paper dry completely until not soggy ( Approx 2 - 3 hours). Place 2 cups vegetable cooking oil into deep frying pan & heat to approximately 160 degrees - when rice paper pieces placed into the oil they should sizzle & expand immediately ( 5 seconds cooking time ) , once cooked place onto paper towel to absorb any excess oil.
- Assembly:Place layers of Coconut Tapioca Pudding, Mango puree & diced fruit / berries into serving glasses , topping with additional. Place in fridge until ready to serve - place a crispy rice paper garnish in glass just before serving.
