- Ribs500gm pork ribs, cut into bite sizeSauce for pork ribs½ teasp 5 spice powder1 teasp salt½ teasp black pepper1 tabsp soy sauce1 tabsp oyster sauce½ teasp sodium bicarbonate1 tabsp tapioca flour (“sun fun” in Cantonese)1 clove garlic – finely chopped1 lemongrass – finely chopped2-3 kaffir lime leaves – finely chopped3 tabsp water1 eggMix all the above and marinate with pork ribs. Set aside for at least 2 hours, preferably overnightCoffee sauce1 tabsp instant coffee1.5 tabsp brown sugar1.5 tabsp maltose (Note: microwave container for 20 secs for easier handling)1 tabsp minced garlic2 tabsp mirin1 tabsp dark soy sauce1 tabsp oyster sauce3-4 tabsp water Mix and set aside
- CookingHeat oil in wokDeep fry ribs in batches of 5-6 pcs under medium flame until golden brown.When completed, set flame to high and put all the ribs back in the wok and deep fry for another 1 min (this will crisp up the ribs)Set asideHeat wok and reduce to medium flamePour coffee sauce and stir until it starts to boilStir in ribs to coat thoroughlyRetrieve onto a serving plateGarnish with coriander leaves, spring onion and chilli strips.Enjoy….
