Ingredients
- 3 bundles of soba noodles
- 1/2 cup soy sauce
- 1/4 cup mirin
- 1 cup dashi
- 1/2 lime
- Toasted sesame seeds
- 3 spring onions
- 1 tsp S&B wasabi paste
- 1 cucumber
- Kimchi or Asian pickles
Method
- Mix soy sauce, mirin, dashi and a squeeze of lime juice in a bowl, then ladle around 1/2 a cup in 3 small bowls. (Optionally this can go in the fridge to cool down)
- Bowl a medium sized pot full of water on the stove. Add all uncooked soba noodles and continue boiling for 4 minutes.
- Strain noodles and run under cold water for a few minutes (till cool).
- Thickly julienne cucumber and put on the side of a plate. If using kimchi/pickles these can go next to the cucumber on a plate. A handful of the cool soba noodles can then be placed in the middle of the plate.
- Chop spring onions then add some, along with some of the sesame seeds to each bowl of soy sauce dashi mix.
- Serve the plate of noodles alongside the bowl of soy sauce dashi mix and allow each person to add as much or little wasabi to the soy sauce dashi mix to their liking. A teaspoon is enough to give lots of flavour and a bit of a buzz in the mouth which is perfect for beating the summer heat!
