
Ingredients
- Pre cooked long grain rice sachet reg size
- 1 slice ham, diced
- Cooked chicken from left over roast chicken or cook your own small pieces of 1 thigh fillet
- 1 tbsp abc sweet soy
- 1 egg
- Dash of sesame oil to fry
- Stir fry vege mix such as bunch broccolini, frozen peas, snow peas, 1 julienne carrot, bok choy bunch, 2 mushrooms cubed, squash or zucchini, capsicum pieces whatever, basically whatever is in the fridge that can be stir fried
- 1 tbs sweet chilli sauce
- 1tbs mushroom flavour soy sauce
- Opento sweet pickled ginger
- Sprinkle with fresh chopped coriander if you like it's flavour
Method
- Whisk egg, fry in sesame oil and then break up, add meats, stir
- Heat rice in microwave sachet 90 secs
- Add hot rice to pan and stir fry with mushroom soy
- Stir fry vegetables in separate pan with sliced ginger
- When vege is al dente, add chilli sauce and soy sauce and any Asian herbs on hand
- Serve vege and rice - note vegetarians can add vege omit meat and egg from the rice, gluten free folk use a gf sauce type
- Finish with sprinkle of herbs such as coriander
