Ingredients
- 2 medium carrots
- 2-3 medium potatoes (any kind work)
- 1 medium brown onion
- 1 pack S&B Golden Curry (any spice level)
- 500ml water
- 100ml milk or milk alternative
- 1 Tbsp neutral oil
- Spring onion, to garnish
- Cooked rice, to serve
Method
- Chop onion, carrots and potatoes into even, bite-sized pieces (roughly 2cm cubes).
- Heat neutral oil in a large pot over a medium high heat. Add chopped onion to the pot and cook until translucent.
- Add carrots and potatos to the pot, along with 500ml water. Turn heat to high and bring to a boil.
- Once boiling, turn heat to medium low and let the vegetables simmer, covered, for 15 minutes or until fork tender. Stir occasionally.
- Once the vegetables are cooked, turn heat off and add in the milk and golden curry cubes, stirring until combined.
- Serve curry with a side of rice, and spring onions to garnish. Enjoy!
