
Ingredients
- 2 packs, 600 g fresh Tassie salmon skin off
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp ground black pepper
- 2 tbsp lemon juice
- 4 cloves garlic,minced
- Cream cheese, mayonnaise and thickened cream crust:
- 1/2 cup cream cheese
- 1/4 cup Kewpie mayonnaise
- 1/2 cup thickened cream
- 3 tbsp grated cheddar cheese
- 1/4 tsp salt
- 1 tbsp all- purpose flour
- Mixed veggies:
- 1 medium chokos (chayote), diced
- 1 cup corn, carrots and peas
- 50 g butter
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1 tbsp vegetable oil
- green onions (to garnish)
Method
- Wash salmon in running water and pat dry with kitchen towels.Rub the salmon with olive oil on all sides followed by salt then pepper. Drizzle salmon with lemon juice and place in a baking dish.
- Place the crushed garlic evenly on top of the salmon and let sit for at least 10 minutes.
- Pre heat air-fryer/oven at 170 degrees C.
- Making the creamy coating:In a bowl, mix-in together cream cheese, thickened cream, mayonnaise, cheddar cheese, flour and salt.
- When the salmon is done marinating, evenly spread all of the creamy mixture on top of the salmon.
- Place inside inside the air fryer and bake for 25 minutes or until the crust is golden.
- While waiting for the salmon to be baked, heat oil in a pan over medium heat. Add onion and garlic. Sauté for about 1 minute. Add the chokos, carrots, peas and corn. Add butter and season with salt. Saute for another 4 minutes or until veggies are just tender.
- Serve the baked salmon with the mixed veggies on top or as side dish. Enjoy!
