Ingredients
- 1 kg diced chicken breast
- 3 tbsps rogan josh curry paste
- 400 ml can of coconut cream
- 3 tbsps brown sugar
- 1/2 cup crunchy peanut butter
- 1 tbsp of SQUID brand fish sauce
- Fresh coriander to serve (optional)
Method
- Place the curry paste in a wok and cook over low heat for one minute.
- Raise to medium heat and add all the chicken. Stir fry until the chicken is cooked.
- Lower the heat and stir in the coconut cream.
- Gradually stir in the brown sugar, peanut butter and SQUID brand fish sauce.
- When is everything is well blended serve with basmati rice.
