Ingredients
- 1 cup Sushi Rice
- 3 x Chicken Schnitzel
- 3 sheets Obento yaki nori for sushi
- 1/4 avocado sliced
- 1/4 Cucumber, cut into batons
- Obento sushi seasoning, 4 tbsp
- Kewpie mayonnaise, to drizzle
- Lee Kim Kee Soy sauce, for dipping
Method
- Put 1 cup of sushi rice in the rice cooker, washed. Fill with 1 1/4 cup water.
- Place chicken schnitzel fillets in an air fryer at 220°C for 18 min.
- Prep vegetables, cutting into batton shapes.
- Once rice is cooked, fluff rice and let steam for a further 5 min.
- Once rice has steamed and cooled begin assembly. Place nori sheets shiny side down on a bamboo mat covered in plastic wrap.
- Add rice and filling to to the nori sheet, leaving 2cm at the end. Roll nori sheet using bamboo mat and cut into 1/8 pieces.
- Serve with soy sauce and kewpie mayo.
