- 2 Table spoon VALCOM Authentic Thai Massaman curry paste. (Used separately) 1.5 Cups Basmati Rice1 Tea spoon salt (level)1 small green capsicum. (Chopped finely) 1 small red capsicum (Chopped finely)1 small yellow capsicum (Chopped finely)1 small chilli (Chopped finely)1 large carrot (grated or sliced with a vegetable peeler)1 cup chopped coriander leaves½ cup mint leaves1 Cup of washed rocket leaves.1 cup roasted macadamia nuts½ cup raisins rinsed in hot water2 Table spoons soy sauce4 Table spoons lime juice.
- Cook rice with sufficient water adding 1 Table spoon VALCOM Authentic Thai Massaman curry paste and the salt.Drain and cool rice.When completely cool, pan fry rice in little oil and add the other 1 Table spoon extra VALCOM Authentic Thai Massaman curry paste. Fry till partly crispy.Cool completely.Add chopped vegetables, herbs, nuts and raisins to cooled fried rice.Mix well adding the soy sauce and lime juice towards the end of mixing process.Decorate with coriander leaves.Serve with drinks of your choice.
