Ingredients
- 2 Salmon Fillets Skin On
- 1/2 Jar Valcom Laksa Paste
- 4 Chat Potatoes -quartered
- 1 pkt Udon Noodles
- 400ml Coconut Cream
- 250ml Coconut Water
- 1/2 Bunch Asian Greens
- 2T Oil
- 1 sliced Fresh Chilli
- 2 T Fresh Coriander
- 1/2 lime
Method
- Depin salmon, pat skin dry, lightly season
- To make Laksa, place 1T oil in saucepan, heat, add paste, fry till fragrant, add potato, fry 2 min, add coconut water, put lid on, simmer 5 minutes till potato tender. Place Noodles in boiling water as per pkt instructions.
- In a frypan heat remaining oil. Place salmon skin side down, cook for approx 5 minutes, then turn to seal remaining 3 sides.
- Whilst salmon cooking, add coconut cream and greens to Laksa, drain noodles and add so coated in sauce.
- Place Laksa with noodles in 2 bowls, squeeze lime over then place salmon skin side up on top, place greens around side, sprinkle top with chilli and coriander to serve.
