Ingredients
- 1 pack (900g) firm tofu, pressed and cut into cubes
- Marinade Ingredients: 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp mirin
- ½ tsp sesame oil
- 1 tsp grated ginger
- 1 clove garlic, minced
- ½ tsp chilli flakes (optional for heat)
- Coating Mix: 2 tbsp cornstarch
- 1 tbsp panko breadcrumbs
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp five-spice powder
- Tofu topping: 1tbsp furikake (Japanese seaweed & sesame seasoning)
- ½ tsp toasted sesame seeds
- ½ tsp salt
- For the salad: 3 cups mixed greens (e.g., romaine, baby spinach, or rocket)
- 1 small cucumber, small dice
- ½ cup red cabbage, shredded
- ½ cup edamame, shelled (frozen, defrosted)
- 2 tbsp spring onions, finely sliced
- ½ cup coriander leaves
- ½ tsp chilli flakes (optional)
- Kewpie Roasted Sesame Dressing (as needed, about 3-4 tbsp depending on preference)
- Garnish for Tofu, chilli crisp oil, sesame seeds, fresh sliced red chilli
- 1/2 cup neutral oil for frying
Method
- Prepare the Tofu: If tofu is not pre cut into cubes, slice in half and then each half into 8 pieces
- Press the tofu to remove excess moisture (place on a large chopping board with a piece of baking paper on top and place another similar shape board on top with a weight on it for 15 minutes).
- Mix the marinade ingredients together in a large mixing bowl.
- After pressing the tofu, place it in a shallow dish and pour the marinade over the tofu and let it sit for 15 minutes, flipping occasionally.
- Assemble the Salad: In a large bowl add mixed greens, cucumber, red cabbage, coriander, spring onions, edamame and chilli flakes if using. Set aside.
- In a shallow tray or bowl mix together the coating mix ingredients.
- Drain the marinade from the tofu - do not rinse marinade off tofu prior to coating. Toss the marinated tofu cubes in coating mix and coat evenly. In a seperate bowl, mix together the tofu topping. Set aside for after pan frying.
- Heat neutral oil in a pan over medium heat.
- Pan-fry tofu pieces until golden brown and crispy. In batches if needed.
- After frying, immediately toss gently with tofu topping mix while hot, coating evenly.
- Drizzle Kewpie Roasted Sesame Dressing generously through salad and divide equally between plates.
- Place the crispy tofu on top and garnish with extra spring onions, sesame seeds, and chilli oil on top of tofu. Enjoy
