
Ingredients
- 1 packet Firm Tofu
- 1/2 cup Rice Flour, seasoned with salt and pepper
- Peanut oil for frying
- 1 bunch Boo Choi
- 1 clove Garlic, crushed
- 8cm Ginger, cut into fine matchsticks
- 6 Mushrooms, finely sliced
- 1 bunch Bok Choi
- Sliced chilli, to garnish
- Toasted Sesame Seeds, to garnish.
- 1/3 cup Kewpie Sesame Soy Dressing.
Method
- Cut the tofu into 2cm cubes.
- Coat the tofu with seasoned rice flour. Remove excess.
- Heat the oil to 180 degrees. Cook the tofu in a few batches and drain on paper towel.
- Meanwhile, lightly cook the garlic until fragrent.
- Roughly tear the bok choi leaves into large pieces. Roughly chop the bottom of the bok choi into larger, bite sized pieces.
- Add the bottom pieces of bok choi, mushrooms, ginger to the garlic. Cook for approx 1 minute, until just softened a little.
- Add the bok choi leaves to the other vegetables and briefly stir fry until just wilted.
- Remove from the heat and stir in the Kewpie Sesame Soy dressing to taste. Just before serving, combine the vegetables with tofu and garnish with sesame seeds and chilli.
