- Salad1 cup shredded cooked roast chicken (approx 1/2 store bought roast chicken) 1 cup julienned carrot1 cup julienned cucumber1 cup finely shredded wombok1 cup bean sprouts2 spring onions (green part only)1/4 cup coriander1/4 cup mint1 tbs toasted sesame seed1pckt Changs fried noodlesDressing2 tbs palm sugar2 tbs fish sauce2 tbs lime juice1 tsp sesame oil1/2 tsp finely chopped red chilli
- Into a large bowl, finely shred the roast chicken. Add carrot, cucumber, wombok, bean sprouts and herbs. Finely slice the spring onions (green part only) and add.To make the sauce, shave or crush the palm sugar in a mortar and pestle. Add the fish sauce, fresh lime juice, sesame oil and chilli.Mix the dressing through the salad ingredients.Add the fried noodles just before serving (or they will go soft). Sprinkle with toasted sesame seeds.Serve and enjoy!
