Ingredients
- 1/2 cup Textured vegetable protein rehydrated in 1 cup vegetable stock
- Chopped celery, (2 stalks) 1 red onion chopped, 3 cloves chopped garlic and 2 chopped red chillis
- Kidney beans 1/2 can
- Brown lentils 1/2 can
- Sambal oelek 2 teaspoons or more to personal taste
- 1/2 cup cooked brown rice
- Cos lettuce leaves
- Kewpie roasted sesame spicy flavour Japanese dressing
- Chick peas 1/2 can
- Pinch of dried herbs eg thyme, sage, rosemary, salt and pepper to taste
Method
- Rehydrate vegetable protein in vegetable stock with added dried herbs until soft
- Saute chopped celery onion garlic and chilli in olive oil
- Add vegetable protein and cook 5 minutes
- Add kidney beans, brown rice, chick peas and brown lentils
- Add sambal oelek, simmer gently for 5 mins
- Spoon into cos lettuce leaf cups and drizzle with Kewpie dressing
