Ingredients
- Rice – medium/long grain, 2 cups, freshly-steamed
- Water - 3 cups
- Oil – 6 Tbsp
- Red Onion – chopped, 1/2 pc
- Spring onion – thin slices, 1 stalk
- Garlic – minced, 1 Tbsp
- Salmon – Canned/Drained, 200g
- Mayo – Kewpie, 3 Tbsp
- Ponzo Seasoning – Obento, 10 Tbsp
- Sesame Oil – 1 tsp
- Sesame Seeds – 1 Tbsp
- Salt – season to taste
- Crushed Black Pepper – season to taste
- Crushed Dried Seaweed Rice Seasoning– 1 handful
- Flour - Plain, 1 cup
- Eggs - 4 pieces, beaten
- Bread Crumbs - Obento Panko, 2 cups
- Vegetable Oil for deep frying
Method
- First, cook steamed rice with 3 cups of water. The rice to water ratio is 1 is to 1.5 in order to make the steamed rice on the moist, sticky outcome.
- Whilst the rice is cooking, saute onion in a pan until slightly translucent. Add in the spring onions and saute until the aroma brings out a savoury smell. Add in the minced garlic and mix, followed by salmon and mix until the fish is flaked.
- In a small bowl, mix the Kewpie Mayo and the ponzu seasoning until it becomes a dressing. Pour into the pan and gently combine with the salmon mixture. Add sesame oil and sesame seeds.
- Season to taste with crushed black pepper and salt.
- When the steamed rice is already cooked, pour the mixture into the rice cooker or pot and mix with the rice.
- Add in crushed dried seaweed rice seasoning and mix well. Adjust seasoning with salt and pepper according to your taste.
- When the rice mixture is already a bit cool, form them into balls using your hands. The size depends on your bite size, but I prefer 50 grams. The rice balls is now ready for eating.
- For DEEP-FRIED RICE BALLS, dredge the balls in plain flour, dip in beaten eggs, then dredge again in bread crumbs or panko until coated evenly.
- Deep fry in vegetable oil in small pot until golden brown, and enjoy!
- NOTE: You may also freeze the coated rice balls until you are ready to deep fry some of it. Love the creaminess from the Kewpie Mayo, the citrus flavour of Obento Ponzu Seasoning, and the crispy texture made possible by Obento Panko. I am sure both kids and adult will love it as it is a meal-in-one-ball, and fun to eat! Not only that, it is very easy to make! I even ate so much after I created and cooked my own recipe of the deep fried rice balls. I love it!
