Ingredients
- 1Tbs Peanut Oil
- 1/2 Roast chicken, chopped into bite size pieces
- Handful of green beans, chopped into small pieces.
- 1/2 red capsicum diced
- Small bunch broccolini chopped
- 4 pieces of S&B Golden mild Curry Mix
- 1 400ml can Coconut cream
- 1 red onion diced
- 2 cups of cooked jasmine rice
- 200g spinach leaves
Method
- Heat oil in pan and cook the diced red onion for 2 minutes on medium heat.
- Add the curry blocks and 2 cups of hot water to the pan. Stir until blended smoothly.
- Add vegetables and simmer for a 2 minutes. Then add can of coconut cream and stir. Simmer for 5 minutes, stirring occasionally.
- Add chicken pieces and spinach leaves. Stir, then cover until spinach wilts. Turn off heat.
- Serve in bowls on top of cooked rice.Enjoy!
