Ingredients
- Valcom 165 ml premium coconut milk
- 1kg diced chicken thigh
- curry paste (A1 daging) 230gm
- Lge white onion, carrot, stick of celery, coriander, fresh chilli , your favourite rice , cucumber or pappadam for crunch
Method
- Dice onion, carrot, celery - fry off in cast iron deep pan. Add diced chicken thigh till lightly browned
- Add Malaysian curry paste, mix well to coat, add water, boil for a few minutes, reduce to simmer. Prepare rice, coriander, chopped chillies and a cheeky pappadam for crunch if you like. A blob of natural yogurt or crunchy cucumber helps cool things down
- Add the delicious creamy Valcom coconut milk to curry pot. Allow to cook through. Serve up your comfort curry with fresh coriander.Add pappadam/yogurt/cucumber if you wish!
