- Mushroom, baby corn, snow peas, carrot, white onion, brocolli, zucchini, red capsicum, green capsicum, sweet potato, TCC coconut milk (2x400ml cans) , salt, pepper, coconut oil, fresh chilli, kaffir lime leaves, basmati white rice, green curry paste
- Cut all vegetables your preferred way.2. Fry off the white onion with a table spoon of coconut oil on a low heat.3. Blanch the brocolli and carrot for 3-5 minutes and then strain.4. Steam or boil rice.5. Add 1/3 cup green curry paste to the pot with the onion and add 150 ml water to fry pan and stir in paste.6. Add all vegetables to the pot and stir. 7. Add coconut milk to the pot.8. Add chilli, salt, pepper, kaffir like leaves and fresh chilli in the pot.9. Let the pot simmer.10. Taste and serve.
