Ingredients
- 1 jar Valcom’s massaman curry paste
- 2 small to medium onions
- 2 cloves garlic
- 4 tablespoons oil
- 6 to 7 chicken thighs ( diced)
- 3 tins Valcom coconut cream
- 600ml of chicken stock
- 4 potatoes
- 3 zucchini
- 2 small capsicum's , can be either red or green.
- Salt to taste
- Steamed rice
Method
- Prepare your ingredients,Dice your onion and potatoes , slice your peppers and zucchini and crush the garlic cloves.
- This is a one pan curry.In a large pan add half the oil and onion, when the onion starts becoming clear add your crushed garlic.
- Add 1 jar of Valcoms massaman paste to pan and stir until the aromas of the spices are released.
- Add diced chicken to pan and cook until lightly brown.
- Add 3 jars of Valcom coconut cream and chicken stock and stir.
- Add diced potatoes , sliced peppers and sliced zucchini to pan.
- Cook on low heat until potatoes are soft.This can take anywhere from 20 mins to 40mins depending on the size of your potatoes.
- Once cooked, add salt (if you feel it needs it.)
- This is the most delicious curry, Serve with steamed rice and enjoy.
