Ingredients
- 500g chicken thigh filletsCut into 2cm pieces
- 1tbs vegetable oil
- 2 onions quartered
- 2 carrots peeled and cut in 2cm slices
- 3 potatoes peeled and cot in 2cm pieces
- 1tbs brown sugar
- 3 tbs soy sauce
- 3tbs Obento Mirin
- 3tbs Obento Sake
- Brown rice
- 1 sheet Obento Nori
- 1 cup of water
Method
- Heat oil in flameproof casserole dish. Add chicken pieces and fry until golden. Add the onion and fry gently with the chicken for a few minutes until softened.
- Add the carrots and potatoes and 1 cup of water, cover with a lid and allow to simmer gently for about 10 minutes.
- Remove the lid and add the sugar, then soy sauce, mirin and sake. Stir it all through making sure everything is covered well. Cover with a lid, reduce the heat and let simmer for 15 to 20 minutes until vegetables are softened. Add salt if necessary.
- Serve with steamed rice and a piece of Nori
