
Ingredients
- 2 spring onions
- 1 teaspoon chilli flakes and 2 small dried chillies for garnish
- small piece fresh ginger grated
- one tablespoon of chilli oil
- bean shoots
- 12 raw prawns
- 2 chicken fillets
- 500 mls chicken stock
- two cans of tcc light coconut milk
- thin rice noodles
- 1 tablespoon turmeric powder
Method
- add oil in pan fry the whites of the sliced spring onion save the greens for later add the grated ginger and chili flakes
- add the thinly slice chicken breast then the chicken stock bring to a simmer
- add the turmeric and the ttc light coconut cream until chicken is cooked then add the prawns until just cooked
- finally add in the cooked noodles, then top with bean shoots, the two dried chilies , and the remainder of the spring onions .
