- TCC coconut milk coconut oil chicken thigh coriander broccolizucchinicarrot pearl couscous
- First brown chicken in a pan with some garlic in coconut oil. Once chicken is cooked add a full can of TCC coconut milk along with 2 tbsp curry powder and chopped coriander. When combined add chopped broccoli, zucchini and carrot and simmer on low until vegetables are cooked though. While you are waiting for the vegetables to cook you can prepare some cooked rice or in this case I made pearl couscous. Serve in a bowl together once curry vegetables are cooked.
