Ingredients
- 350g salmon
- Salt and pepper
- 3 tbsp Valcom Red Curry Paste
- 1 tsp garlic
- 1 tsp Ginger
- 1/4 cup chicken stock
- 400ml coconut milk
- 2 tsp fish sauce
- 1 tsp white sugar
- 4 baby bok choy
- 2 tbsp lime juice
Method
- Sprinkle salmon with salt and pepper and fry in oil for 2 minutes. Remove from pan.
- To make the sauce add the red curry paste garlic and ginger to the pan. Cook stirring constantly for 1 min. Add the chicken stock and simmer. Add the coconut milk, fish sauce and sugar simmer for 2 mins
- Return the salmon tot he sauce and add the chopped bok choy pushing it under the liquid to wilt.
- To serve pour lime juice over the fish and serve over rice garnished with coriander and chilli
